MasterChef Australia 2018's top two face the ultimate pressure test from the culinary icon, 52, in the grand finale as they attempt one of his dishes.
How high was the bar you set for this year’s contestants?
HESTON: Well, I can’t give too much away, but safe to say I’ve come up with something very challenging.
What do you admire about the show’s winners?
HESTON: Through the years, MasterChef Australia has had some fantastic winners. Every year the contestants get stronger. Not only their techniques but also the flavour combinations are simply fantastic. To me, it’s not just about who wins as often there will be someone really talented who may not win but I know will be successful in a professional kitchen. It’s about how they move in the kitchen.
Have you worked with any of the winners?
HESTON: Billie McKay spent a few months with us following her win where she re-created one of our most challenging dishes at The Fat Duck. She was in charge of making the lollies that we serve during the Out to Sea chapter on the menu.
