So what does Leah's average day on a plate look like? Turns out, it's pretty quick and easy.
Breakfast
Feta scrambled eggs on toast with tomato, olives and cucumber.
Snack
Birthday cake slice (a healthy slice recipe, "one of my favourites!")
Lunch
"Salad and I usually swap my protein between Tuna or Vegie Delights Meatless Meatballs for a plant-based alternative!"
Dinner
"Chicken stir-fry (loaded with veggies!) with noodles or rice.
Dessert
"If I'm feeling it, healthy hot chocolate or caramel popcorn."
As for cheat meals, Leah isn't opposed to them but isn't a fan of the name.
"I’m not the biggest fan of labelling it cheat meals, but I absolutely love a Friday night pizza with my partner!" she admits.
"We both get big pizzas, sit on the couch and watch Harry Potter (perfect Friday night!). I’ve done this every week for months and it’s become a tradition now, and I’ve lost almost 6kg in the last few months still having my favourites!"
Meal prepping is one of Leah's biggest tips for healthy eating but when it comes to the best health and wellness advice she's ever received, it goes a lot deeper.
"The best thing I heard was, 'You can love yourself, and want to seek change at the same time,'" she says.
"That to me was mind-blowing, because after my injury and battle getting back into exercise, I felt unhappy with how I felt, I didn’t feel like me but I didn’t hate myself. I still loved myself but wanted better for myself but didn’t want to be seen ‘changing’ because for some reason."
"Society has this preconceived idea that change means you hate what you are. Where I felt the exact opposite - I chose healthy change because I love and wanted better for myself. That advice or quote was something that will stick with me."
