Matt gave away his lack of connection with Helena when he forgot their French meeting.

Matt showed every possible sign of avoidance.
He scratched his nose, looked at the floor, nodded too quickly licked his lips constantly as they were drying under stress.
He avoided eye contact - Blinked quickly as a sign of avoidance, bit his lip to hold back his thinking and scratched his ear. He made incongruent moves like drinking his wine and frowning at the same time. It was all very awkward.

Here’s the thing: every time she says something romantic Matt flicks his eyes to the ground and back. The fact that he is avoiding that comment psychologically is a very bad sign.

Matt approaches this topic in a very definite way. He is not asking, he is telling. He has made up his mind that she is just in it for Instagram.
Before he speaks his eyes are on the ground, then they dart to her to accuse.
Her answer does not alter his expression. He has decided.

Chelsie:
Matt holds more eye contact with Chelsie than the others.
He does, however, do incongruent actions like caress her and look to the floor.
Actually, the caress is more like a shoulder scratch.

The pace of a smile’s onset also shows intention and Matt smiles too quickly for it to be genuine.
In fact, when Chelsie describes problems with her relationship, Matt scratched his neck as if to say “WTF!”
He looks at the floor and says “I loved spending time with you”. Incongruent again.
He is more connected with her than the others, but this in no look of love.
After they kiss his eyes again divert away from her.
Chelsie, on the other hand, is open in her expression and her eyes are direct.
In conclusion
Matt is struggling to open up and connect with any of them. His greatest comfort is Chelsie’s education.
