In May 2019, the couple became engaged after Ben proposed to Erin on the beach with a stunning diamond ring.
"Of course I said yes", Erin wrote on Instagram at the time.
"I was silent for a bit, shocked and stunned, but I am incredibly happy."
The couple planned to get married this year, but have put their wedding plans on hold until they can have a proper celebrations once social distancing measures aren’t required.
“For me, I didn’t want to forego that big celebration that I envisioned my entire life for my wedding,” she told Seven’s The Morning Show in June.
“I’m ready to wait until the time is right when I can have all of my family and friends safely under the same roof.”
Ben jokingly added: “It has given me an extra six months to prepare my speech."
“But on the flip side of that, my best man and the MC, it’s given them more time to prepare a bit of dirt for us as well, so it’s dangerous.”
Although the couple are currently spending some uninterrupted time together after years of doing long distance, they don’t share property or usually live under the same roof.
Normally, the pair wouldn’t spend more than two or three weeks together at a time, before one half of the couple would need to leave again to travel for work.
Erin says the couple are in no rush to live together full time.
“I really don't see there being any real rush to live under the same roof," she told Daily Mail Australia last year when asked if they plan to live together after tying the knot.
“We're both in time-sensitive careers doing what we're doing, and considering he's gone so much overseas, it certainly in't worth uprooting everything that I'm doing at the moment, knowing that he's physically gone a lot of the time anyway.
"Nothing will really change. I'll just continue to live in Sydney and Brisbane."
While being in a long distance relationship is “not without its difficulties”, she says the couple have learned to make it work.
“When the end goal is that you'll be together and that's all that really matters, you just deal with it.
'Because we're both able to follow our passions and our dreams, there's no resentment on either part.”
