"He’s just so intelligent and he has a great sense of humour. He’s also not fazed by what I do for work and all the attention that comes with it."
And it seems that Joshua was feeling the same spark as the Aussie icon, starting a long-distance romance with Sophie while he was based in the US.
The relationship was unlike any of her previous romances, with the Beauty And The Geek host confessing it had a lot to do with her self-confidence.
She also conceded that she used to go after the wrong kind of guys for her, telling TV WEEK in 2021 that she had to become comfortable in herself before finding true love.
"When you don't feel good about yourself, you attract the wrong thing or you look for somebody to fulfil you," she said.
"But you need to meet someone who's a bonus to you, not someone to fix you."
That's exactly what Josh has been to her and Sophie has been smitten ever since, posting regular updates on their romance on Instagram - including the news that they were engaged in 2021!
Josh popped the question on Christmas Day in 2020, presenting his future wife with a stunning diamond ring that he designed himself.

"Told you I'd tell you guys first. I'm engaged," Sophie wrote on Instagram, alongside a snap of her and Joshua embracing with her sparkling ring on show.
"I honestly can't thank you enough for all the love and support. I know I have the coolest people following me and you've always had my back and I feel so cared about. You're absolute bl--dy legends.
"I’m not very good at being mushy. I’m trying to say I absolutely adore you. @joshuargross and I are so happy. Josh designed a very personal ring with my favourite Aussie designer and I LOVE IT."
Fans were delighted by the news and Joshua seemed pretty pleased that Sophie had said yes - but there was never any doubt in our minds - she simply adores him.
He told WHO exclusively in 2021, "When I came onto the set while she was filming Beauty and the Geek, I was blown away by her talent. She’s incredible. I’m a very lucky guy.”
The couple also revealed, perhaps unexpectedly, that they wanted a low-key wedding.
"When it does happen, it’s going to be a very casual, low-key wedding," Sophie revealed.
"That might surprise some people, but it’s what we both want... We want it to just be about Josh and me.
"If we have too many guests and it turns into this whole big saga, I’ll just go into full performance mode."
But before they could tie the knot they welcomed a new family addition: a puppy!

Bluey the golden retriever joined the Gross-Monk household in December 2021, almost a year after the couple got engaged.
He was a welcome (and adorable) addition to the family, but had fans wondering when Sophie and Joshua would finally say "I do".
They got their answer in April 2022, when the pair surprised everyone by announcing on Instagram that they'd wed in secret all by themselves!
Sharing a slew of wedding photos to social media, Sophie revealed that she got the perfect, private wedding she'd been dreaming of with her new husband.
"I HAVE A HUBBY! We eloped-ish at home," she captioned the joyful snaps of her in a stunning, fitted white gown.
She later changed into a sparkling number and wrote of her new husband: "I can’t believe I met him on a plane! It’s crazy. Best flight of my life!
"I really do believe everything happens for a reason. I love you @joshuargross thanks for putting up with how messy, disorganised and lazy I am.
"Youre my best friend in the world AND you are welcome for how hilarious my jokes are and how I absolutely smash you in Xbox F1! We’re both lucky."
The news made headlines around the nation and now Sophie is making the most of life as a newlywed, while helping others find romance on the new season of Beauty And The Geek too.
When asked if their relationship had changed after the wedding, Sophie said things had stayed the same and that was fine by her.
"It feels a bit more like he isn't ever going to leave you while he's hard at work," she joked to TV WEEK.
As for kids, Sophie and Joshua would love to start a family but aren't in any rush yet.
"We'd love that [kids]," she said. "It just depends if it's in our path."
In June she told WHO she and Josh were "definitely trying", later adding on the Kyle and Jackie O Show that they were “going to have a break and chill”.

“We are working towards that and if it happens it would be incredible, but if it doesn’t then that’s just not meant to be," she told WHO.
“That’s the only way you can look at it. I’m a big believer that everything happens for a reason.”
Sophie also told Kyle and Jackie O that she froze her eggs but the journey to parenthood hasn't been a simple one.
While discussing family plans, the star said they’ve had good news and bad news in the process, but pregnancy rumours have been hard on her.
She confessed having people ask if she's expecting every time she puts on a bit of weight is deeply personal and she wishes it wouldn't happen.
